Piña Colada Danish Recipe
Ingredients
For the Filling:
• 8 oz Cream Cheese, softened
• 1 Tablespoon Sugar
• 2 teaspoons Coconut Extract or Flavoring
• 1/3 Cup Sweetened Coconut Flakes
For the Base:
• 12-Pack Hawaiian Rolls
• 4 Tablespoons Melted Butter
For the Topping:
• 1 Small Can Pineapple Chunks (drained and patted dry)
For the Icing Glaze:
• 1/2 Cup Powdered Sugar
• 3 to 4 teaspoons Pineapple Juice (reserved from the drained can)
Instructions
Step 1: Make the Coconut Cream Filling
In a bowl, mix together the softened cream cheese, sugar, coconut extract, and sweetened coconut flakes until smooth and creamy. Set aside.
Step 2: Prepare the Hawaiian Rolls
1. Pour half of the melted butter into the bottom of a baking dish to coat the surface.
2. Place the Hawaiian rolls in the dish.
3. Using a knife, cut a small square in the center of each roll. Press down with your finger to create a small well in each one.
4. Brush the tops of the rolls with the remaining melted butter.
Step 3: Fill & Bake
1. Transfer the cream cheese mixture into a zip-top bag, cut the corner off, and pipe the filling into each roll.
2. Place a drained pineapple chunk into the center of each filled roll.
3. Bake in a preheated oven at 375°F for 14 to 18 minutes, depending on how crispy you want your danishes.
Step 4: Make the Pineapple Icing Glaze
While the danishes bake, whisk together powdered sugar and pineapple juice (adding 1 teaspoon of juice at a time) until you reach a smooth, pourable glaze.
Step 5: Drizzle & Serve
1. Once baked, remove the danishes from the oven and let them cool for about 5 minutes.
2. Drizzle with the pineapple icing glaze.
3. Let cool slightly, then serve and enjoy!
