There’s nothing better than a simple, delicious dessert that looks as beautiful as it tastes. These Lemon Blueberry Upside-Down Cakes are the perfect combination of bright citrus and sweet berries, all caramelized to perfection. Plus, they’re incredibly easy to make using a box of lemon cake mix! If you’re looking for a quick and impressive treat, this is it.
Ingredients:
• 1 box of lemon cake mix (plus ingredients listed on the box)
• ½ fresh lemon (for extra flavor)
• Butter
• Brown sugar
• Fresh blueberries
• Lemon zest
Instructions:
Step 1: Prepare the Muffin Pan
Start by lightly greasing a muffin pan to prevent sticking. In each muffin cup, add:
• 1 teaspoon of butter
• 1 teaspoon of brown sugar
• A few fresh blueberries
• A Lemon Zest from fresh lemon
This creates the caramelized, fruity topping that will be revealed once the cakes are flipped!
Step 2: Mix the Cake Batter
Follow the directions on the box to mix up your lemon cake batter. For an extra burst of citrus, squeeze in the juice of half a lemon before blending everything together.
Once mixed, carefully pour the batter into each muffin cup, but don’t overfill—remember, the batter will rise as it bakes!
Step 3: Bake and Flip
Bake according to the time and temperature listed on the cake mix box. Once done, allow the cakes to cool in the pan for 2–3 minutes before flipping them out onto a dish.
The result? Gorgeous mini upside-down cakes with caramelized lemon and blueberry toppings!
